no it will give the food a different texture because it breaks down and cooks differently. Haven't they been finding that margarine is not that good for you, using pure vegetable oils can actually be healthier.Is margarine a good substitute for vegetable oil when baking?

Vegetable oil is better for you, but if your going to substitute anything butter would be better than margarine, at least it'll taste better and no trans-fat.
Vegetable shortening would probably be a better substitute.
no....it will cause things to dry out. one is a liquid the other is a paste at room temp.
Try using applesauce instead of the oil. I use it in cakes and cupcakes a lot and I can't even taste it. It doesn't mess up the texture of the cake either.
It can make a difference in some recipes, but I don't think that it would be any healthier at all. Have you considered using canola or sunflower oil instead?
