How do you cook eggplant without so much oil?

I slice the eggplant, spray a cookie sheet, place the rings of eggplant on the cookie sheet, spray the eggplant and bake it at 500潞, turning it once as it starts to brown. Sometimes I lightly flour the eggplant but not necessary. Just don't let it burn. I learned that from a wonderful Italian restaurant that used to exist in South Seattle, Washington named Italo's - it was a great little restaurant with the candle in the wine bottle on the red checkered tablecloth. I miss that place!!How do you cook eggplant without so much oil?
OVEN ';FRIED'; EGGPLANT





1 med. eggplant


6 tbsp. lo-cal Italian dressing


6 tbsp. grated Parmesan cheese


6 tbsp. packaged bread crumbs





Slice and pare eggplant 3/4'; thick. Soak in cold water 10 minutes. Drain and blot on paper towels. Dip in 1. salad dressing 2. cheese 3. crumbs. Put on jelly roll pan (15';) sprayed with Pam or other spray. Bake at 450 degrees for 7 minutes. Turn and bake 5 minutes more.How do you cook eggplant without so much oil?
Well, I either cut my eggplant into circles, about an inch wide, and spray with cooking spray on a baking tray. I put oregano, garlic powder, salt, and pepper on it, and bake until golden brown.
microwave the daylights out of it first. just plain, no water or oil. when you cook it in your normal recipe, its already partially cooked so no need to keep it in the oil that long.
I like to peel and cube an eggplant and add to prepared sauce - you get all of the flavor without adding any fat or carbs.
my mom usually grills eggplant...it tastes really good grilled. you still need to brush it with oil (and salt and pepper) though, i think.
